Pato's Tacos

This tiny luchador-themed taqueria on East Colfax seats just twelve customers, and it has a menu to match; it offers only a dozen varieties of tacos (including vegan and vegetarian options) plus a few sides. But each of those twelve tacos comes stuffed with simple, high-quality ingredients. One of the spot's best sellers is Pato's Especial: a tortilla topped with fresh guacamole and chicharrón. Another popular choice is filled with a Yucatán-style stew with cochinita (roast pork), which is pulled after four to six hours in the oven and is flavored with achiote, garlic, onion and orange juice. Together, they make an unbeatable team.
