Behind the Scenes at Dos Santos

When Kris and Jason Wallenta were kids, their mom used to call them her "two little saints." And Dos Santos, the taqueria they opened this summer in Uptown, is definitely deserving of praise. Rather than trying to run a wholly authentic Mexican restaurant, Kris says, the brothers are "bringing a taste of Mexican flavors." But what flavors! From citrus-kissed, slow-braised pork in the "porky" tacos to the riot of colors, flavors and textures in the chilaquiles, the eatery's menu satisfies all the senses — not to mention the Uptown crowds who flock here, according to Gretchen Kurtz in her recent review of Dos Santos.
